HAM BACON I use to take my biggest smoked picnic. cut off the bottom long ways 3/4 of a linc above the fat, I would slice it on the slicer and tray it out like bacon, the rest of the picnic I would slice, taking out two center slices and tray as a extra lean smoked picnic, saving the end for smoked hocks. in tho...

How many of you have merchandise Pork Neckbones LOL When we use to get lean meaty neckbones, I use to cut the best tips off them for lean meaty spare ribs, the meaty part of the neckbone I put out in a 4 to 6 inch cut as backbone with bones cracked every inch, the rest went into neckbones.
