I had the pleasure to visit with several Master Butchers from Germany last month. One of them shared this video with me. It is a competition much like what Leon would like to put on here in the U.S.

The meat companies over there promote and support them, they want well train meat cutters/butcher. The ones that are in the Tri Nation Competition are backed 40,000 dollars for a 8 man team. Here our companies could care less, they would rather we just go away so they can cut it all and put it in their little pre pack trays
