wholesale cuts of beef


my local restaurant depot stocks a cut of beef that is labled "slider meat" - this is a new one on me - the guys who work there don't know what it is - it a cryopacked bag of beef about 10# to 15# - what part of the steer does it come from and what will I find when I open the packaging?????????

Possibly it refers to sliders (mini burger meat). Was it a fine grind or coarse ground product?

thanks for the reply - not ground at all - appears to be maybe trimmed and rolled piece of chuck - it sells for around 3.50 a pound (but less by the case)

When you find out please share it with the community. One more thing. Did you get the establishment number off the package or possibly a name or something? What part of the country are you in? I have a few packer friends that I can ask.
