Do you ever use strap ons?


Do you have this kind of boneless pork loins in your store?

The reason that is on the label is that the packer never removed the "Nuchal Ligament". Commonly referred to as "back strap, or paddy-wack! Personally I never saw that before. Thanks for sharing. Do you get pork like this in your store?

 I think it means something else. There's no bubble gum on the boneless pork loins.

Strap on means they left the tail on when they packaged it. Strap off means the tail was removed. I used to get both. Strap on was cheaper and gave more trim for sausage. Strap off you just open and slice, no extra work needed.

Similiar to lipon or lipoff ribeyes and neck on or neck off chuck rolls.

now I gotta check ours tomorrow, We get some Canadian pork that has the tail on... but don't think box is labeled strap on... the crew would have noticed that one
