I saw one of those at a Stater Brother's grand opening in Apple Valley Ca about 11 years ago. I'd never heard of it being cut that way before. I was real impressed. When I returned to N. California, I cut one for our counter too. They look real cool, but unless it's already sold (pre ordered), depending on how long you keep it in the counter, you'll probably lose money on it when you take it apart and steak it. They look fantastic in your counter for the December holidays. Yours looks better than mine did. Your ribs match each other nicer. I took some pink/peach platter paper and made some pretty nice chop holders. That disguised the slight mismatch of the ribs, but that takes a lot of time and would be for display only. It would have to be removed before cooking.
I made this real quick right now for this picture. If it was actually for a roast, I'd take my time and make the cuts more even. Fold a piece of paper in half and make several thin cuts in it about half way down. Pick a better color of paper. Maybe foil paper if you can find it.
Then form it into a circle onto the rib and tape/tie is closed.
