Ok guys and girls I'm on a roll with that "stupendous money making idea" about "purge". Now I'm working on another, but I need some feedback on these questions below. All kidding aside! I need your help.
Obviously the rail-beef users will have more fat and bones but you boxed beef users will have some too.
1) Please tell me what you are doing with your fat and bones?
2) Are you being paid to have them picked up?
3) Are you paying to have them picked up?
4) Are they going into a dumpster?
5) If you are selling them, what bones are you selling?
I was very surprised when I learned on this forum a year or so ago that most do not get PAID for their fat and bone! When I was in the trade we got paid for it. Even with boxed beef our weekly F&B pickup (at the big chain) ranged from 750 to 2000 lbs/week per store, depending on what was on sale, but we were not a Mom and Pop. I don't remember what we received for it but I do remember when I worked for two chains of independents it was a big secret and it was under the table cash for the owner. Also there was always one register per store that was under the table cash for the owner. Along the same line, at the independents, there was always at least one employee dedicated to clipping coupons full time which was also under the table cash for the owner.

We did sell marrow bones as soup bones and we also sold neck bones as "meaty soup bones.

all good questions,,,without just one answer,,,,depends on the region,,,,if I were in your shoes, id make some phone calls,,,
call sme rendering companies in your area,,
also call the trash pick up folks,,,,see if they take anything in a dumpster
it also depends how much you hae
but if your wheels are turning to make some money and you have bones and bones,,
then post in craigslist,,,,you have dogbones for half price or .50lb
for the fat,,,,you can grind fat once,,,,form it into a baseball size,,,roll it in birdseed and call it a birdball for .99-1.49lb
many old folks will buy these to feed the birds..
if you are really adventurous,,,
you can grind the fat once,,,thru the grinder,,,place in oven to dissolve into liquid,, (in a sided brownie pan) pour liquid fat in pan,,,add bird seed, peanuts,,,, sunflower seeds,,,,,and let it set up (solidify) then cut into squares for "critter snacks"
I sold 3,000 dollars worth of birdballs,,one fall winter
if all else fails,,depending where you are,,,advertise in craigslist,,,or on some local online hunting forums,,,you can sell/give them fat and bones,,,...many hunters will pay for this

All great ideas and thanks for the input it really helps as I will be starting another topic about fat and bones. I am going to put this info. into the The Meatcutter Club Resource page.
Yes I sold as many birdballs as I had time to make but it was never a priority. I never thought of it then, but your brownie pan idea has merit. Then cut them into the same size as the commercially sold suet cakes.
