Very enlightening. I started in kosher and we used only forequarters so we had to fabricate the chuck with many of the new cuts of beef. We always needed Briskets but the plates

were for pastrami. great insight into the problems. I use to say to have a succeussful Butcher shop you have to sell the chickens and the chop meat.
