I find it interesting how one can start as a scholar, and find fulfillment in the world of meat. I have a degree in history. I WAS a licensed teacher here in Oklahoma. The path I loved the most was as a wrapper/meat cutter. I left my profession behind to pursue this trade.
I love to try different types of sausage. Once I pumped beef, jalapeno, bacon and cheddar cheese. Smoked it but came out mushy. So the next batch I hung it to loose some of the moisture then smoked it. MMMMMMMMMMMMMM perfect!!!!!!!!!
