I swear this is true


 I was in L&I market cutting and wrapping. This fella walks in like he owns the place. I asked if I could help him. Well it was a USDA inspector or some USDA dude. He just was supposed to check cooler and freezer temps. No problem my cooler and freezer are very cold, 32 and 0 respectively... uh oh
I have a deer in the cooler.... 

****...

I just kept on cutting. He walked back into the prep room. He asked me what I was cutting etc just to pick my brain.... ???? (He went in, I saw him look right at it... whens the **** gunna HIT THE FAN??) 

"Temps all look good Art, Oh YEAH! Art, I noticed you have one of your buddies laying down in the cooler. My boss, great guy, sometimes he follows us and checks back in a day or two. Do me a favor, take care of that so I don't get my ass chewed."
You bet I will. I was planning on doing him up tonight.

The inspector AND his boss both brought in elk within the week for us to process. And they wanted and payed for the best. Marinated COV steaks, roasts, sausage. Then gave us a tip.

Wish all the USDA guys were that freakin cool.
