I was asked to try this knife out at work and say what I think. To be honest, I liked it when I first saw it in the BK catalog, but it lacks a finger bump on the handle. The workmanship and blade grinding and symery are exceptional, what I've come to expect from Vic knives. After just a short time of use, I noticed the grip seems to stay put with very little hand pressure. It might be due to my gloves and the handle material. But my fears of knife cuts due to slipping diminished. The blade is what one expects from Victorinox. Good quality steel, holds an edge well, steels back with some effort due to material hardness and a very fine steel. The blade also seems well tempered, doesn't feel over brittle, IMO important in boning knives. I boned and processed 3 sides using the knife, it still has a keen edge. I'd give it a 9 out of 10. I like it, it's only one of two newer boning knives I've tried that I like. I am very picky.
