Monday Club Secretary Ryan Stewart and I went to the Atlanta to visit with Steven Lingenfelter, owner of Illegal Foods. We got to play with a side of beef with Steven & crew, Danny Benson,sous chef, Micheal Micheal is his beef man. They are opening a nose to tail operation. They were needing a little help on breaking down of primal sides. Ryan is my protege, wanting to learn all he can about cutting hanging beef. Steven help give him some experience with a side & a hand saw.
They are wanting to run two sides a week there. Steven & crew has my respect, they are true believers in " Waste Not". I had a lot of fun with this bunch, they good people and I hope they do well with their restaurant. Ryan and I got to sample some differ items they had, Fine eating !! He was enjoying all of it till the last piece he was eating, Steven said it was veal heart pastrami, the boy loss his taste for it LOL
He also gave me a few lbs of his cured bacon, now brothers & sister that was FINE eating
I wish you much success. I had an old retired butcher in the store the other day talking about how our craft is diminishing. I am telling him about this place.
