54 lbs for the leg! Our scales only go up to 30 lbs.
How about some pictures of your case? And that picture on the wall on the left with the glare on it, what is it?
Is that a pinata on top of the Coke cooler?
It's 1:45 pm and your case need work. Closed on Sunday's?
I see a USA flag on the left and an eagle on the right that looks like the kind that sits on top of a flag pole. Is there another flag there?
In the 1940s that amount of fat or more was normal for a pig. Back then, they used a lot more lard. I think I was taught in freshman agriculture (1977) that pigs/hogs were slaughtered at 400+ lbs live weight and in 77 it was 200-220.
I'm surprised the fat isn't thicker on this pig.
Is that white bottle with the black cap for watering the saw?
We use those same transparent papers for our product, but we got rid of the tape dispensers a few years ago. Our price labels tape the package closed nicely.

Burgermister ...... You r Observent to say the least. here is the pic on the wall ..... no that is not a pinata on the coke cooler .... those r a satna and some trukeys we put out on the holidays ....yes it was 1;45 on a sunday and we got hit hard in the morning and afternoon for the doubble football games as well as it being a 3 day weekend for M.L.K. ......yes we have aanother large falg at the front door image.jpg

Neat picture ButcherD. Look how high the ceiling is! I wonder & where it's when it's from? We cut lamb today too. Five this morning. Just home for lunch.

I always appreciate pictures of the old time butcher shops. Is that an old family photo by any chance?

I noticed how your dog's tail dropped a little when it saw the hanging pig. That monster made the dog nervous.
