Daniel I have a friend that gets me two inch and quarter bone in Sirloins a month, Which I ask for it to have a half inch trim and just V the inside tail fat   THAT IS FINE EATING

I miss dropping the horsehead.

It's been a while since I've seen that cut. I've only cut bone in sirloins a few times.

To me, it seems like it would be a good oven steak; better than a 7-bone chuck anyway.

Nicely done-haven't seen a bone-in Sirloin or Whole Loin for that matter in NC in over 20 years. We only receive Short Loins.
