leon would you be at the end of the line frying up the pig cheeks then? Your pig jowl thread reminded me of this video I had that new year meal greens black beans and smoked pork wasnt jowls though not sure maybe it was smoked hocks. Wife told me greens meant paper money and beans meant coins or something. We were poor but we always had leg of lamb or a goose for new years but we are such simple country folks over here.Can remember my granny wringing neck of the goose and no running water but a well and no indoor toilet we did our business in feild besides cottage and no loo roll was a dock leaf.

Thats why bbq isnt big here its not the rain its in old days ppl cooked in the house and shat outside now its they cook outside and shiite in the house!!!

I am trying to figure out how just the pig heads can pay for all the labor and machinery we see involved here. Would anyoen care to enlighten me?

fdarn when i saw it i thought bet they are on minimum wage and thats where your cheap sandwich ham comes from and it must get steamy in there cleaning that all down pulling all that apart and dousing with chemicals must be worth it though. probably why it pays for itself cheap labour

 My guess is that this is a promotional video put together by the manufacturer of the machine.  They hired a dozen experienced butchers for a one day filming session to demonstrate the machine.  I wonder how many they actually sold.  I look at this and think: if it were me, I would have to hire a dozen illegal immigrants and pay them below minimum wage to maybe break even with this equipment and labor.  

Meat from the head is likable in some areas of this country but mostly the southern states (From my experience).  Even there its not flying off the shelves.  If I remember right even the peppered stuff was priced below $1.69 per pound.  

I might be wrong. If I am please enlighten me.

fdarn im guessing its low wages and mechanically retrived meats im guessing when the head gets to the end if it not cut off it must be boiled off for cat food. No point wasting protein. The meat is probably processes again anyway filled with water cooked chopped and pizza toppings.

I thought it was cool... like fdarn I didn't see a profit... we sell everything from the snooter to the pooter her in the south and even then its a seasonal type thing
