My name is Kari Underlyand I am athird generation butcher. My grandparents on my mom's side were both butchers. My mom married a man named Butch, who you guessed it, was a butcher (I didn't make that up). My dad's mom learned to butcher on the farm during the depression. She was my introduction to whole animal utilization. So this is in my blood.
My company, Range®, Inc. produced these videos as an educational supplement to the James Beard nominated book, The Art of Beef Cutting. There were a few technical difficulties with the sound in the original footage, so the publication was delayed, but our new team was able to edit the video and create a product I am proud to offer.
Our goal is to open The Range Meat Academy. We need your help to establish a butchery trade school which will certify butchers in all areas of the craft. We will offer existing and aspiring professionals five different certificate options covering all aspects of the butchery trade. We will focus on whole animal utilization from the farm, slaughter, processing and fabrication, and curing, to retail marketing and merchandising.
