David said From blade end to sirloin end, this Mangalitza pork loin has the finest texture and flavor of any pork I have ever procured! Yes we trimmed the nearly 3 " layer of back fat to grace some terrines and a few roasts for another time. Even after slightly overcooking the chops a bit they were still flavorful and moist. The fat was buttery but not overly greasy ,if you can believe it! And Thanks again to Joe Parajecki and Mangalitza Breed for resurrecting this most rare breed of pork!
