I feel the need to publicly thank your for this web site and safe haven for all us "simple minded" and the highly educated meat men and women. Many has been the time that I felt I was the only one out there that did this for the love of the craft, and had believed it until a couple years ago when I came across Meat Cutters Club. I have literally spent hours pouring over your thoughts and comments along with those of others who have posted here. I am not ashamed to say I have learned a lot from everyone who posts here. Thank you to all the members, but a special thank you to the "Godfather" of meat, Leon!

RJ I agree with you about the Club and Leon, I met the old pervert when i was a meat wrapper for Ingles, Jasper, Tn. when he came to relieve our market manager when he was out sick, I worked with him for 4 weeks, he is a great meat cutter and a great guy. The morning he came in, a Fri, our meat case was just about empty, I ask him if he was the new market manager, he told me NO, you are the market manager, i'm your cutter, He said you know more about this market then I do, So you call the shot and I'll cut it, we filled up a empty 20,000 dollar meat case in 5 hours. Back then we were still using Primal and Sub primal Cuts, Leon could make a meat saw sing and the first and only man I ever seen that could cut and trim his steaks or roast on the saw and make them neat like he had used a knife. I have seen many fast meat cutters with a knife but he was the fastest one. I work with a few more times but a day or few days at a time. I left Ingles and went to work as a meat wrapper for Bi-lo, we stayed in contact over the years. Bi-Lo had a meat training program back then, Leon stayed on me till I took it, he help me through my training by phone and video's he would send me. I worked 6 years as a meat cutter for Bi_Lo, in Chattanooga,Tn., Any time I had a problem or question he was a phone call away. Then I moved to Ms and now I'm the Assistant Manager in a big butcher shop making 750 a week with a monthly bonus. I wouldn't be a meat cutter or have my job if it wasn't for him. He taught me to love the trade and have a passion for it, Do I hug his neck or cuss him out lol
I agree with RJ also. cowboy has brought a lot of meat cutters together that has a love and passion for our trade and I also have learn a lot from this Club & it's members
I also agree I know im the new guy round here but i am thankful for this site... the wealth of knowledge that's here ...the willingness from everyone to help and encourage... I love reading the posts and watching the videos I have learned things from both I did not know before..
