Very nice job. Whole Foods we knifed our chops for a cleaner look and more shelf life since they were more expensive. Sprouts we just cut them on the saw and are at a more affordable price so they move quickly. He has great knife technique. Pulling STRAIGHT BACK which will save you from getting carpal tunnel syndrome in the long run.

great video... question...how thick do you cut your chops? at my job we have to cut all bone in chops at 3/4 except breakfast chops which we cut at 1/2 .
abe ...... this was a custom animal .... all cuts were requested .... these happen to be 1" chops ....... for the case in the shop we do a standard 1 1/4 " chops ...... sell like hot cakes
