Daniel said, " Lady walks in, says I need to feed 12 people with the meatiest short ribs you got, I invite her around the counter to watch me do some special cuts just for her........ 6 just for practice before her big dinner party ....... I give you tam-a-hock short ribs ...... the lady left with pep in her step..... only after per ordering another 12 for her dinner party"

They look like they are tied. What a great idea! What would you call them? Frenched short ribs. Scepurek Ribs would be a good name for this cut.

Ya these were a cool little idea ...... call em tam-a-hock short ribe ..... looked more into it and in the U.K. thay r knowen as Royal short ribs

Yes tied ...... Braised or smoked these r to die for ...... did an ole fashioned crock pot but used these insted, cut the bones short enough to stand them up and fill the spaces with chunked veggies ...... a smidge of good red wine and the rest was good seasonings and chic broth ......... DAMN TASTY
