You ever seen a calloused ribeye this bad


I saw this on Face book on a meat site there, never saw steatosis this bad

Muscular steatosis is a condition where muscle fibers have been replaced by fatty deposits, which creates a striking appearance in cuts of meat with it. Sometimes this condition is simply called “steatosis,” “callous,” “calloused lean” (other spellings include “callus,” “woody callused”), or because it is observed sometimes in the ribbed carcass, in this case, it is called “calloused ribeye.”

It passed inspection because it was a kosher ribeye and the small end had 2 inches of meat on it and the top had the cap in it. It still weighed 20 lbs and looked normal to every body. Once I pulled the cap off and started to trim it, I noticed there was something wrong. It had what looked to have healed but previously broken ribs hidden under the rib membrane.
