I like tying them myself. Doing a proper butcher knot is a skill nets were designed to replace. Its cheaper to tie too.  You don't need one of those stainless steel sleeves.

Now days we use net , it looks fine and it's time saving.

Whatever the request of our customer is the way we do it..........  no preference, we tie it.

I've always like tying my roasts was a trick to the trade years ago. The faster u were with making the roast
Looking good you were considered one of the better ones.

we tie every thing pork & beef, i was taught by a old timer, I find it amusing to watch some of the young cutters trying to tie biggrin.gif

I agree with lady filet....I got one better though. I am right handed and was taught to tie by a left handed cutter. that really messes people up when they try to do it like i do. lol

we tie what few we do,most of ours come from warehouse already tie, we do a lot of pre pac
