Reaper's Edge a face book friend post this picture, 
 commissary pork set up,
 
they average 25 to 30 cases of pork a day....
usually just one guy cutting and traying......
He says thank God for automatic wrappers lol

25 - 30 cases of bone in loins? How many loins per case?

Center cut loins, of whole loins? I remember when there were 6 whole loins per case, now it's usually 4.

I like the old days when there were several people in most shops. At least 1 full time wrapper, usually 2.

A manager working the counter AND 3 cutters, plus a night person and clean up boy (person).

Anyway, those 3 cutters would team up and cut those 25 cases real quick. That's what I like and miss.

3 guys teaming up on a pallet of anything. Pork loins, full cut rounds, chucks, etc.

1 fast sawman and two people trimming, traying and wiping.

When I was at Big Y foods in Ct, one guy used to cut 25 to 30 cases of boneless pork

by hand when they were buy one get two free. the most i ever did was 56.

The store manager got a dirty look from me when she asked where i was and what did i do all day...
