This is my first post and I am very excited to say that we just started bringing in whole bison here in Westmont, IL. It has been a lot of fun breaking it and the customers are just as excited as we are.

I never broke a forequarter on the block. Always on the rail. It seems like it would be harder on the table. I don't even want to set one down on the table.  Those look huge. How much do they weigh? 225lbs ?

yeah the forequarter on it is huge! especially in comparison to the hind. Hanging weight was at 550

This man will be a legend one day. Bancroft, you're Bison cuts were outstanding, we sold that whole Bison at great margin, and it was quality! and local! Living the dream, man.

Me and slant saws never got along very well. How in that one working out for you? 

That is a big animal you are working with there.   Do you usually cut them on the rail?  I am assuming you laid them out on the table for the picture.

It's been working out all right. Just have to watch it when splitting bones.
We are a newer store and still have yet to get a working rail system. Breaking everything on the table was difficult at first but we've made it work so far. Hoping to get the owners to give a go ahead with something soon as it has become a little dangerous and very tiring.
