It's a side-feed inlet to allow product from another first cut grinder to feed directly into the hopper.
I have never seen this done, I think it's used more in the processing part of our industry
One of the guys I worked with at the store where this is, has seen one used. At a Pack And Save several years ago. A super high volume store. He said what you are saying. But it doesn't look very practical to me.
It is to connect grinders together. I used a set of three like that when I was at Stew Leonard's back in Ct. It made for very fast work doing 500+ lbs of beef trimmings at a time. The set up ended up being 15 feet in the air for the first hopper, it was like that so you could grind standing upright.
Yes. It is used for another grinder. We once had one at one of my earlier works. Its was a big hypermarket. We even had a lift to lift the steelcontainers with meat up in to them.

Yes, it is a side feed opening to hook up, or piggyback ,a first grinder ,usually with a larger hole breaker plate to feed directly into the next grinder. Grinders are connected with a feed tube, similar to a sausage stuffer tube,that goes between thegrinder plate and the ring. Tube then slides into the hole on the side of the next grinder, and is held in place with 3 thumb screws to prevent uncoupling during grinding. Your grinder can be used as a single grinder by using a white poly cap held in place with 3 thumbscrews to seal the tub.
