I've seen it sold as a roast, marinated roast, chops, stir fry, kabobs, cube steak, pork scallopini, country style ribs, ground pork, cut in thin marinated strips and sold on skewers. It's wrong, but a restaurant in my area got caught selling it for veal scallopini about 10 years ago. Does that count as one? You could butterfly it real thin and stuff/roll it with sausage inside, pork fajitas (marinated stir fry with vegetables). add fat and make any number of bulk or stuffed sausages (Italian, Chorizo, Sage, hot Italian, breakfast links, breakfast patties)
