His father trained him from the age of 7 to cut meat and make sausage.  By the age of 12 he was able to break down large beef carcass and sort out the different cuts of meat.

My thanks to everyone... It's interesting the older you get, the more you go back to your roots. Being the boss keeps me running all over the country.. but I now get to spend time with all these exotic animals at our ranch processing operation. One day its Elk, another day, Scimitar Oryx, then Aoudad Sheep... Lechwe.... etc... from the carcass on the rail... to the cryovac packaging.. it's just me, my knife and the meat and that is very relaxing. I think back on what my father taught me and I'm very proud to be a 5th generation butcher. Thanks again... Tim
