My name is Kari Underly,
Author of the James Beard nominated book,
The Art of Beef Cutting
Many of you know me but in-case we have not met...I am teaming up with Kate Hill, from France, to teach a weekend class on a whole beef carcass break down and charcuterie (French style of curing meats) along with a hog break down.
Our workshop focuses on women. We have noticed that when a large piece of meat, like a beef side, is the subject of the class, men tend to dominate the hands on learning and the women tend to step back and watch instead of grabbing a knife, and begin the hands on learning they expect. Therefore our class is focused on women learning from women.
This is our first class and it starts on April 12th - 14th. The class is two days of hands on learning.
Workshop Price: $875
Includes: 15 hours instruction, carcass costs, morning coffees, lunches and BBQ supper. Copy of Kari Underly’s The Art of Beef Cutting and Charcuterie-at-Camont workbook, boning knife, apron & charcuterie-to-go made in class. Does not include: travel, accommodation or other personal expenses. A portion of all workshop fees go to support the Annual International Grrls Meat Camp Rendezvous and Scholarship Piggy Bank.
We are not asking for money (unless you can't help yourselves) but simply for your help to spread the word about our venture. We have scholarships available, or if you know of someone that may be interested we would appreciate your support. We need to reach more ladies.
