[ncchoicesnews] Hands On Whole Hog Butchery Class at Yellow Wolf Farm
Our first class was a great success (and a lot of fun!) and we have had so many requests from people who want to participate, that we are having another class March 17th. Click on the link below to sign up. You need to purchase a ticket in order to be signed up for the class and the class is limited to 12 people. We will be butchering two whole pigs into primals and then individual cuts. The pigs will already have been dispatched at a USDA processor, we are doing the butchering plus making bacon, sausages and talking about cooking and charcuterie. Each participant will take home about 20 lbs of Heritage pasture raised pork.
