In those days we split and bone & rolled every chuck, about the time of this ad I would say box meat was coming in fairly strong and a lot of it was used in these sales. early 70's you seen bone in chuck roast for 59cents

1991-2,, smiths grocery spend NO money on adds, it was just know that they had the lowest prices in town on meat.
4 week rotation on, first $119 full bone in round, then 79 cents bone in chucks, on the boning block 85 was a slow day. 125 chuck was norm.. week 3, 79 cent country style pork ribs-shoulders. week 4 was ends cheap bacon and FrZ. turkey breast. the EZ week.. 30% ground beef, every day 79 cents, morning grind was a ton of beef 2,000 pounds. that make us pass 10-10;30 am break. Day shift took no lunch, one 30 min break. some days, Mger, would let us all go on a noonbreak. off at 1 pm-1:30.. for a 8 hour day.
I came in and had the honor to become number 3 out 18 person crew. the few younger ones that been there for 3+ plus yrs hated that. I thought, yeah, same pay, but I work 6 days straight one off then 13 days straights, then 3 days off. 19 days out of 20 and I do good to get two day over time, 3-4 of this circle I only get one day out of this of OT.. then all over again. NOTE too be number 3 I had to cover close and mid shift days off then 24/7 meat dept. closer on week end was 2 AM. 1 am weekdays then I would need to be there at 5 Am or sometimes 6AM. on those shift, I just sleep in the cutting room with empty beef boxs.
I hoping to be able to get back on with them,, NOW,, lol but, it isnt the same.. Their pork is per-cut.
NOTE in 1991-2.. to be on the blocks, you had to be able to cut 30 14-16 pound pork bone in loins in 30 minutes.. that would just cover the morning, We had to cut again 60-60 more later in the day.
lol,, talking about able to go to sleep on saw or block- while WORKING- now a Journeymen get`s cut.... Someone would need a special cut,, say standing rib roast,, I laughed sometime, it go off the block, and I ask my other two cutters what was that? and not one us could say what it was, after gone off the block..lol
Some dumb reason i love working with that old crew. mger, EVERYMORNING, was a living hell for the first two hours of the day. till, we have the counter in by 10AM.. then he be all laughs.
Goal then was to cut a 3% gross. boneless beef loin steaks then was about $6 a pound, at other stores. we sold them at 3- 3.50 pounds. that shop was the highest in company at 5 % gross.
Hello, At Albertsons in south florida we use to have million pound beef sales, cut chucks ribs loins and rounds of Beef,Pork Lamb and Veal. The chickens were prepackaged. It was fun. I was the head cutter and we had sales for 250,000 for the week so you can imagine the work. They did not like overtime but allowed us a hour each day so six hours ot.
Its not like that now adays, the grinds were cheap. regards Alan
