This picture came from a French Meat Cutting School, I don't think I could work in something like this, I had a hard time even wearing a butchers coat.
Once I was boning a beef shoulder and my knife slipped off the blade bone, hit the cutting table and bounced off the table, then right into my abdomen, puncturing my intestine. I wish I had had the opportunity to wear one of those aprons back then but it wasn't offered. Of course if you do wear one of those I think it woudl be best to wear a cloth apron over it.
It looks like there was some metal left over and the lady put in in her ears.
Can anyone here tell us what you call the hook that's near her left hand? It has 3 loops in it. I bet a lot of people here have never seen one of those before.
When I worked at Denver Meat Company (wholesale) in 1981, belly gaurds were mandatory if you worked the boning table. Leather ones were provided free. Some people bought metal ones, but not like the ones pictured. Smaller mesh and most didn't cover that much.
I think my brother wore stuff like that when he worked in foylemeats for a summer (he was training as a chef so it was pocket money) when i worked im the place in england some ppl who did knife work had gloves but not aprons circa 1990 yes i am old
I have had some close calls even recently. Every now and then my knife slips and arces towards me and I'll thnk one of these days its going to go right into my gut. I wear a thick rubber apron that I hope will stop the blade before it gets too deep but I don't know. I am one of those guys who have their knife going in every direction. maybe thats the wrong way to do it but thats the way I always done it. I am sure I make people nervous.
Let me add about this apron. I think that much metal is unneccessary, but I do believe that good cut resistant aprons should be mandatory. I think its a real joke when they ask us to use those cheap cotton aprons the cook uses. Not only do those do nothing to keep your cloths clean they also don't offer any kind of protection. I had to order a case of rubber aprons for myself. I got 12 aprons in a case and each apron has lasted me about one year so far. I believe they offer some protection from punchures and definilty keep my cloths clean. They are light weight too. How many of you have stains on the front of your pants where you really don't want a stain?
Let me add another note about this picture. I find it curious that they have to wear those metal aprons but have no hand protection. hmmmm....kind of makes you think don't it?

I can hardly stand having my arms covered while cutting either. It drives me nuts, as does wearing a glove on my cutting hand. I prefer a t-shirt and an apron. I usually wear carharts and boots with good wool-poly-blend socks. The new market I am in won't let me wear t-shirts. Alas, we must wear the long white coat with an apron. I don't mind wearing a hat, but I wish I could wear a hat of my choosing (as long as it's clean and/or somehow meat-trade related).
I get purge all-over me. My dogs tries to eat my boots when I step in the door and goes crazy licking my pant legs.
About a year-ago I jabbed myself good in my right thigh with a poo-covered/blood-covered 6" stiff boner when it slipped breaking the straight joint on a swine.

Most of my life I spent in 60 to 100,000. dollar a week markets before pre pack meats, I cut all day long in a t-shirt with two aprons on me, no gloves, I kept a butcher coat beside the market door in case I had to go out to the case or wait on a customer so you can see why I couldn't work in that lol I need to feel free and go with the flow lol

I got my left one once with a 6 because of taking my eyes off what I was doing to cuss out a meat wrapper that had just thrown a beef kidney at me lol
there is a story behind that but I can't tell it here ( wink )
