Beef Chuck Arm Roast


When was the last time any of you have cut a bone in arm roast, O-bone roast? I had a customer say she bought one recently, I have not cut one in over a decade, we cut semi-boneless beef chucks (blade & 7-bone) but not the arm, I asked her what grocery store she bought it at and she thought it was at Safeway. I cant think of any big chain grocery store having them other than Stater Bros. in So. Cal. where they get whole chucks with arm and all. Just curious.

Id be very surprised if any chain is cutting these.


ive seen lamb and veal arm chucks recently,, but not beef for decades...

Sometimes with the older customers their "recent" purchases were decades ago.

 I've never cut one or seen them except in books and video. I think the east coast USA had them more recently than out here in California. We've always (since 1978) cut boneless cross rib roast from that and separate short ribs. 

It's a big bulky heavy thing to cut. Someone might break a finger nail and have to take a week off.

We have the ability if anyone asks, but it would have to be from the non Choice grass fed beef (we get one carcass per week)

I don't think many shops can even get that if they want. Who has carcass beef now? Can you order that in a box?

I am sure you can not get it in boxed beef, I remember back in the early '90's getting the full chuck not boxed and cutting arm roasts or boning out and making clods, short ribs and flat irons but like I said it has been at least a decade or more. now we get boneless clods with top blades in a separate bag, much easier to work but still remember a arm or O-bone roast to be a traditional pot roast, just forgot all about it until I was asked for one.

We cut them here but you can also find them in grocery stores that have a lot of Latino Customers in them

You got that right fdarn, I had a customer ask for a full cut round steak "like she just got last week" when I knew we hadn't cut one in at least three years!

I have cut them within the last year, but it wasn't in retail.

I agree older folks tend to remember olden days stuff more recently than we would like to admit.


I remember seeing them at the supermarket as a kid, but that was 30 years ago. I imagine it's a not a bad cut, especially if the chuck plate is still on a'la lamb round bone chops.
