Il Mondo Vecchio - Salumi closure at the end of November. "We had to make a choice to either to do further testing, or add chemical nitrates or nitrites to the products."

no What a shame this is. Someone making an artisan product and being bullied by the USDA.  It is no wonder our trade is becoming a dying trade. Like the man says he just cannot afford to fight them.
