What have I been missing all these years!


Well the manager I have been training under the last month had ordered a metal scraper. Got it in today and I took it for a test drive. After using a plastic scraper for so many years, I must say I was extremely pleased with using a metal scraper!

ive used all three, my favorite is metal. when working at Stew Leonards in danbury ct, they have an automatic scraping machine, worked real good if it was taken care of proper. plastic get dull and breaks to easy

in fact.....on the show sopranos, they referenced stu- leonards

Im fine with the plastic scrapers

I had a " Meat God " once that wanted us to scrape beef steaks and pork chops with a kinfe so you wouldn't waste time stopping and picking the scraper up.

My crew told me I had to do something about that dumb crap, A few weeks went by and he came in, I told him I was a little behind and would he scrape and tray for me. I was cutting beef loins, whole sirloins on them, by the time I cut 5 loins he told me you know this knife scraping with a knife isn't to fast when you doing a lot of production is it. I told him, well I guess it depends on if you a professional meat cutter or not, what you think ?

his reply was, Kiss my ass and scrape meat with your scrapers, he started to go out the back door to leave, I holler at him and said, That include pork chops to ??

He just thrown me the finger and went out the doors lol

OOOOOOOOO some of the bright ideals I've had to deal with over the years lol

had an automatic 10yrs ago, and yes it is a BITCH to clean..
thought metal was a health dept no no??....we have plastic...we have gone through 2 of them in the 5 1/2 years ive been there

I hated those plastic ones, I use to take a old boning knife and run down the edges once a week to keep them working.

I been stuck with the plastic ones for years, used a metal one in my first shop, getting use to the plastic ones took a few weeks, just didn't seem right.

We don't cut anything with a bone anymore, so no scrapers anymore

Nothing but metal for beef & pork, plastic is good for ham steaks. Just a thought, but if metal is a no no from the health dept do you use plastic knives too? That one does not quite add up by my math.

Metal scrapers are are the way to go.

How come pork chops don't seem to get scraped in far too many places on the retail side of the business?

 I have plastic knives. I keep them near the plastic grinder that's near the plastic band saw.
