Matt,,,, I would think its not here in the states, for they are not talking Hispanic, LoL... I was thinking that is kosher Beef. bleed out ! for lack of blood stains left on the blocks. I am not sure, for Me, I got to tell you I start cutting in 1989. As the old timers then was calling me a box cutter , for the beef came in boxes VS hanging on the rails.
I would love to work there, but only if I could keep my same pay, benefits & job security.
I did work at a place similar to that in 1981. It was called Denver Meat Company.
It was in San Jose California, but it was called Denver Meat probably because most of the meat came from Colorado. Usually about 6 truckloads of about (65?) beef each per day. It was already quartered. They didn't have a kill floor.
It was very hard work and I'd probably be in very bad shape if I still worked there today. My hands/wrists felt like pins and needles some evenings after work from all the repetitive motion and I was only 20 back then.
Denver Meat Company was a little bigger than the one in this video I think with a different set up too.
I googled Denver Meat Company and the result I got is different from the one I worked at 31 years ago.
