Question, Is the Pendulum swinging back???


Does the number of companies pushing full service meat cases and the wave of butcher shops opening across America suggest the pendulum is swinging back to good cuts of meat because customers are demanding better than prepackage. Is this why Companies like standard meat market.com  see the demand, are cutting primal and can't keep it in the case. Is this swing the reason one recruiter is now paying meat cutters relocation fees and help on rent for the first three months to get them away from other companies?

I keep hearing about the swing, but we haven't seen it here in Arizona. Pendulum is still going the other way. The local Kroger (Fry's) just pulled their service buzzer--no more grinding or slicing at all. They say a rising tide lifts all boats--but here in the desert we're still hot and dry!(haven't got a cost of living raise in 6 years).
