hey mainemeatman, the last 5 years I ran a market I had the pick 5 program, company wanted 20 items in the fresh meat case, 15 in smoked case, I carried 118 items every week, 56 in fresh counter, 62 in smoked, I run a 29 to 31% every month, either number 1 or 2 in sales and gross in my district of 12 stores. the damn store sold so many grocries that I could never pull but 29%distribution. but in that store it was nothing for people to check out two to three carts of nothing but can goods at a time. I even had mexican t-bones, ribeyes and strips picked 5 in my case. even sold bone in chuck roast on pick 5 but only when I cut them myself. they were a hot seller, if I had the time to cut them, could have sold 10 or more a week. as it was I only got to cut 4 or 5 a week
fdarn I would say off hand he cut them his self so he didn't have much waste, especially if he was pick fiving them. young cutter not use to square cut chucks can cost you. at lest thats my thought
