That looks like the crud you pull out of the head of a grinder after grinding a ton of tube burger-or this was stuck on the back side of a sausage horn after making alot of sausage

Sometimes while grinding, the plate will get plugged up with this stuff. It happens when the plate is not tight enough or the blade and/or plate is worn, or don't match up well. It happens right away the second you try to use it. You MUST stop. there's no way to continue. If you're lucky (and do this right away), you can tighten the head a little and it will work properly. But usually you have to open the head and remove the plate and scrape it clean and start over. I like to blow it out with the hose. That's what I did for this piece. After hitting it from behind with water from the hose, it peeled right out in one piece. The problematic plate in question is not the one in the picture. That one went back on the grinder.
oh yeah i hate it when that happens. and it had happened to me 3 times in the last 2 weeks. something to do with my cleaning crew not putting it back together properly.

I learned to never assume it's put together correctly. Someone may forget to put the blade in, or just not tension the head correctly. I always open it and re do it.
I don't like the cleaning person putting the plate on because I'm gonna take it off anyway.
Our grinder is weird. You must lubricate the plate first or else it will burn some. You'll smell it and hear it. Some guys use mineral oil, but I wipe it with a piece of fat. I don't recall this ever being an issue with other machines, but this one won't work with clean dry parts.
reminds me of the grind tester, does anyone still use one? 2 oz. of fresh grind formed into a flat donut shape and cooked under a heat element and the fat and water is measured in a testing tube for fat content.

I have one. It's mentioned in this thread (copied below). There are pictures of it several posts down. Scroll down to January 26th. Then scroll down to the 7th post of that day.
