Velvet steak comes from the round.Where in the round is it from? I do have the answer
It's my understanding that it comes from the heel part of the outside round. That big round thing that fits between the eye of round and the bottom round/rump. It contains the mouse.
The center part of the heel, we call that the rat tail. When we used to have rounds on sale I used to tie the heel around and sell them as beef shin for $5 a pound with bones costing 49 cents a pound and Rounds coming in at $1.19 per pound it was worth the effort and case space. Customers liked the fact they untie the string and not worry about dealing with cutting it off the bone
