Hey I got a question about Beef Liver. How many you like to freeze it then take it to the band saw for slicing? LOL thats what I used to do when I was mad at my clean up crew.

We grind suet and beef livers and other clean gut meat, and waste meat and waste scraps together, freeze it, and then cut it up on the bandsaw. And, it is sold as pet-food.
Lol, I remember as an apprentice I was always the one who had to peel and slice liver, and always right before lunch, that liver smell stayed on my hands forever.

I remember one time, the headcutter asked us clerks to slice some beef liver up, we both had a piece, of liver to slice, I look over and he's slicing it into stew like pieces, I said, i think you have to thin slice this, to fry,...he replied "mind your own damn business" in a serious tone- what a prick I had eaten this stuff growing up, (thank god the dog liked it,) and knew what it should look like- from pricing it.well the headcutter comes over, the other clerk is all done-with his liver stew pieces, and im still working on my slices, to get them even
John the other clerk speaks up and proudly says "I'm done already" the headcutter picks up a couple slices I did, then asked the other clerk, wtf did you do with that liver"? The headcutter said- why didnt you ask, if you werent sure how to slice it? Then he turns to me and said-why didnt you tell him how to cut it right...like you? I was waiting for john to speak up and say I did try to help him, but he didnt say a word, so I started to say I tried, but the headcutter looks at John, and sternly says "you know what really pissed me off"? it's not so much you mutilated the beef liver, it's the fact, someone tried to help you and YOU gave him a verbal finger that said F.U. (HE had heard me suggest to john to slice it, but also heard johns response) If I ever hear the words MIND YOUR OWN BUSINESS, when someone is trying to help you- I will personally throw you out of the fkin store." I looked over at John, he's as red as a beet, and he's glaring at me-I dont think he's ever been talked to like that-the wise ass didnt know what to say. I felt kinda bad for the kid, but also understood the headcutter took this time-to lay into John, to send a clear message. John was 18 like myself, but was very arrogant, always had excuses.
I learned more, in that one episode of cutting liver than I ever could have from a book- than from a year of co-op business classes in school,
