Sorry but it always seems like I am bragging here

Just negotiated a killer deal on Prime Short Loins, 31 days Wet Age on them and check out what we are doing

I spent the day cutting-up 603-lbs (on the hook) of prime beef today.

It was beautiful!

Wet aged , means aged in the vac seal, some dry age folks look down thier nose at this

I have quite a few accounts that much prefer most boxed beef be over 30 days from pack date
