Wayne has been a master butcher for 40 years, Chairman Of Western Wholesale Meat Co Ltd

Meat is his passion, and in passing on his knowledge, He hope to  inspire young butchers  to realise that there is a way forward by bringing back real traditional butchery skills.  He also campaign for butchers to be recognised  as professional, skilled craftsman and for them be paid accordingly. He feels this is the only way we will encourage really talented young men and women back to our industry

Recent achievements

Lectured on beef at. major agricultural faculties
Developed strategy for slaughtering industry in Thailand - 2003.
Designed a national beef grading system for the Ministry of Livestock Development.
International cattle show judge - 2004.
Guest chairman beef panel Thailand - 2004.
Designed complete farm to fork concept for the beef industry to satisfy compliance with all the major retailers.
Conducted retail development programmes for four of the major, international supermarket chains operating in Thailand
Designed and commissioned an abattoir and further processing unit.
Constructed curriculum for forthcoming training courses for the meat industry in Asia in conjunction with the King Mongkut Institute of Technology at Laat Krabang.
Worked for the Halal development Corporation of Malaysia
