This is seriously one of the greatest ways I've seen pork broken ever. The way you take the fatback off with an ax is amazing. Welcome to the club. I'd love to be able to break carcass like this. I get sh** from my superior when I break carcass with a butcher knife and a cleaver. This would never fly in America, though. Too many regulations. This video is awesome.
I don't know what to say realy,but not my bag . Think I would be a bit worried about the bone chips . Cutting the rind of pork is a no no here, anyway I've said too much.
