Ways to cut pork and cow.


I do not understand why when cutting meat, use a saw. Much faster and easier to cut with an ax. I hack the pork carcass into pieces with an ax for sale, 8 minutes. A half carcass cow in 20 minutes.smile

do you cut the individual chops with the ax????

This is seriously one of the greatest ways I've seen pork broken ever. The way you take the fatback off with an ax is amazing. Welcome to the club. I'd love to be able to break carcass like this. I get sh** from my superior when I break carcass with a butcher knife and a cleaver. This would never fly in America, though. Too many regulations. This video is awesome.

Finally a real butcher!!!!

My grandfather and father came over here from Poland 1922 and that's the way they butchered the hogs for the farmers.

My grandfather would not eat a piece of meat that was cut on an electric saw because he felt that it was already cooked by the saw blade.

The shelf life on your cuts must be a lot longer than if it was saw cut.

in the 1980's my dad was still good at cutting pork chops with a cleaver.

I don't know what to say realy,but not my bag .
Think I would be a bit worried about the bone chips .
Cutting the rind of pork is a no no here, anyway I've said too much.
