check out the prices in this video, when I came into the business Choice T-bones sold for $.79 lb, no tail was taken off, the fat trim was 1/2 on all steaks,no inside fat was taken off, only V out. listen close to it and you will hear some of the rules & regulations we had back then. one of them will be about grinding chuck & round if you couldn't see us grind it. For those that ask where the old English Cut roast came from you can see when they break the chuck down for roast.

"Red Points" and "Blue Points" that were issued to control commodities. Red Points were used with the purchase of fresh products and Blue Points were used with the purchase of processed products.
