AH! Now I can put a face to the name! Yes we have met at several meat shows in the past. I have gently picked your brain in the past, look out now, I'm gonna be on you like a buzzard on a fresh carcass in the desert! LOL

Yeah I tried to lay low at the shows, letting Pat and Sean get all the attention. That is right we talked at the AAMP show in Reno... Let me know what you need... I only have a couple of recipes that I took an oath of secrecy on. What is funny is some of my favorite products that I have tried so far are from Butcher Boys in Vancouver, WA. I went and saw Peter to pick his brain about some products I was working on for the Philippinnes and he said "help yourself, there not secrets!". I will tell you that my son absolutely loves of his maple bacon and I would lock that recipe away like Coke, put motion and infared detectors around it!
