I have a weird question


today I was ask if we carried chicken oysters by a guy that was in his 60's. I was honest with him and told him I never had heard of anything like that but would check to see if we could get them, my meat director laugh and said there is no sure thing. anybody know what he is talking about

your meat guy is an idiot.........i always call dibs on the turkey oysters for thanksgiving. i even set them aside for myself when cutting turkey parts.

My first guess would have been it's the same thing as rocky mountain oysters, but once I read that you (kbraker) set them aside when cutting turkey parts, I knew what it was. Yes, those are great! Almost always they are stolen from the back and left on the thighs in order to make more money on cut parts. My mom is the one who pointed out to me that that is one of the best parts and that was before I got into the business.

I think they are better when cooked in a whole bird rather than cut off with the thigh and cooked separate from the back.

Is it the little piece of darker meat near the back that is left on the thigh? You have to kinda "dig' it out? I always thought they were the kidneys. I like 'em. Tastes a little like the liver.

 That's the oyster. Best piece on a bird. I always eat 'em at Thanksgiving. My mother always has me cut the turkey up for the rest of the family. My wife and kid always get the oysters.

That's how you know if someone knows how to cut a chicken up properly...if they keep the oyster with the thigh or leave it on the back. It should stay with the thigh.
