440 lbs. Dressed wild boar.


I had the oppertunity to bone out an entire wild boar today, that dressed out to over 440 lbs.

I was looking forward to doing it cause I have never worked on boar before. I was thinking it would be maybe 200-250 lbs. Max. Well when this sucker came in it looked like a monster.
What I also noticed was it had a strong, sow/one nutter smell. The meat looked gamey but the smell almost made me gag. In all my years I have never smelled something so foul!

The owner of this beast wants to grind it all tomorrow.

My question is, has anyone else worked with Wild boar before and will the smell "cook out"? I want to try it but.....

I clean pigs all the time from hunting. I ice and drain several times in a cooler before i process seems to help alot . Do the same with venison
Did he leave it in the hide to long ? did he nick the bladder ? these will both taint the meat

I boned two wild boars recently (250 lbs each) and there was really no smell to speak of.

he must have let it warm up somewhere between killing it and bringing it to you.

you will need to clean and bleach the grinder after you are done with it.

Cut a big boar for a guy once. He took it home, put it in the skillet and that smell made him throw it out to the dog. Later he looked out the window and saw the dog licking his butt. He said it was trying to get the taste out of his mouth!

Sorry but that is the nature of the beast. The only way I know to get the smell out is to cook to 170 deg.F and hold for 30 minutes. Better have some good ventilation.
