  Hey all,this is a new to the board but not the industry person,Mike Anderson is my name and it seems that I read all the replys and agreed with them,I have always taken 0.13 on the digital scale which is .001 more then the legal in California,Nevada Arizona and Washington State,also it is the stand that Costco Wholesale had for all the werehouses chain wide when I managed the one in Silverdale Washington,I always would take the amount and spread it evenly over the metal dougnut and put a hole in the middle of the meat,didnt have to but I was told to do so.

The way I was taught to measure fat content is to throw a small amount up on the ceiling and see how long it takes to fall.

i used to work with a guy who would do that right before the inspector walked in. he was crazy.
