I met this French Butcher (Eric Nieulat) on Twitter, I'm hoping he may join us here, He is on our Face Book page now.

This is a link on http://universboucherie.com/  of a Artisan Butcher that is a prime example of there skill  http://www.jucia-tradition.com/  you may have to wait a min for it to load pictures across the top, WORTH the wait

I can't read the french but this is an awesome site. First I love the meat hooks graphic. I love the animated charts on the bottom that breaks each animal into primals.; this is a very well done site.
