I got a special order for 130 peices of country style ribs. About how many cases of pork butts would you estimate would be need to fullfill this order? Assuming each case has 4 cryovac bags and each bag has 2 pork butts in it. Or in other words 8 pork butts to a case. I am thinking about 2 cases to do this assuming I cut nice pieces and not using the very end of it.
It all depends on how you cut them and how big your customer wants the ribs to be. If i am cutting bone-in western ribs i cut the butts about 1 1/2" thick and then split that slice into two "ribs" You should get about four nice slices this size from a pork butt. If you cut them this way you will need 16-17 pork butts. If I am cutting boneless western ribs I still cut the butt 1 1/2" thick but then cut that slice into four "ribs". If you do it this way you will need 8 or 9 butts.
Hey there, we don't use pork butts for country stlye ribs.We use the ribend of the loins and split it. You would get about 8 to 10 pieces off each loin end.
I guess it depends on the region. A rib from the butt I would consider a western rib. Normally I get 8 -12 decent sized ribs from a butt depending on thickness, plus ends for sausage.
i guess i asked a pretty complicated question because everyone has different preferences on how thick they like to cut country style. I do use rib ends off the loin for country stle too but i prefer to call those western ribs anything off the pork butt are country style.
